Swedish Potato Pancake (råraka) with Vendace Roe, Smetana, Dill, and Red Onion

Ingredients:
Firm potatoes
Red onion
Butter
Vendace Roe (löjrom)
Sour cream (smetana)
Fresh dill or chives
Lemon
Salt and peppar
  1. Set the oven to 210 degrees Celsius hot air. 
  2. Peel potatoes and grate using the coarse side of a grater. 
  3. Soak in cold water for about 30 minutes, drain thoroughly in a colander. Feel free to press out excess water.
  4. Spoon the potato batter thinly onto OneForm, flatten it, sprinkle with salt and add a slice of butter on top.
  5. Place the OneForm in the oven. Flip them after 10 minutes for a sear on both sides. Wait for an additional 3-4 minutes. Fry until thoroughly cooked, crispy, and beautifully golden browned. 
  6. Finely chop red onion and dill (or chives).
  7. Top each råraka with a spoonful of Vendace Roe (löjrom). Add a dollop of sour cream (smetana) on top.
  8. Sprinkle freshly chopped dill/chives over the råraka and garnish with red onion. 
  9. Serve the råraka while it's warm and crispy with lemon on the side. Enjoy!
